I am currently learning lot of digital/analog signal processing. What areas of experimental physics could this skill be used in? I have done A Hall effect experiment were there was some signal processing were you follow a signal chain and such but im not sure if signal processing is common in condensed matter?

Signal processing is useful in most experimental fields. I personally work in AMO and stabilizing and locking lasers does require a good knowledge of signal processing. In general, any field with lasers usually requires a decent knowledge of DSP.
