I have talked to a professor at University in USA. He said me to mention his name in my application from he liked my profile. Should I mention his name in MY SOP? or just write SOP targeting my interest in his research field only? in this situation how should I write my SOP. As professor liked my profile does it increase my chances of admission at that university?

If this professor said he had an interest in working with you, then I would mention that in the SOP.

Yeah, if a professor says to mention them in your application, that will almost always be done in the statement of purpose, where you should say that you already have talked with and have interest in their research.
